have a look at the mifare_tool utility sources.

To emulate a card you need obviously the key(s) used - to calculate a
key from sniffed transaction you need documentation for the "Crypto 1"
cipher used in Mifare card - but no documentation is publicly available.
Several groups are currently working on reverse engineering Crypto 1.
