Have a look at my OpenBeacon USB firmware. Just make sure the you
reserver the amount of flash needed on top of the flash inside the
linker file (.ld).

Just pick any display with I2C - there are only few anyway (digikey.com).

AFAIK there are no normal antennas. For 13.56 MHz you need magnetical
loop antennas. The electrical component of the field is none of our
business. I used a Hula Hoop as a high gain magnetical loop antenna (see
my first CCC talk):
